Choice editing isn't a sufficient response in itself
The scale of the systemic challenges faced in shifting towards sustainable, healthy diets appears to be greater than the scale of the changes that can be accomplished via choice editing. So while light touch choice editing may be helpful, it is not a sufficient response to the challenge ahead.
