Substitution

Much that we once did at home we now pay others to do for us. For example, 100 years ago much food was grown, prepared, and eaten at home. Today the US "eat out" ratio is about 40%. And most food prepared at home is purchased in some "pre-prepared" state. This is an example of first-stage service.
